Root vegetables

Select at least 2-3 vegetables from the following list:
Carrots, beets, turnips, Black radish & onions.

1. Prepping the vegetables

To prepare the mineral broth, start by heating 6 cups of water in a large pot or slow cooker. As the water warms up, prepare the vegetables by chopping them into chunky pieces. If the vegetables are organic, you can leave the skin on for added nutrients. You will need 6 organic carrots, 2 beets, 1 black radish, 1 sweet potato, 1 yellow onion, a piece of ginger, and 2 garlic cloves.
Next, cut the herbs, including cilantro and parsley, into smaller pieces. Additionally, add a piece of kombu, a type of seaweed known for its rich mineral content.

2. Simmering to perfection!

Once the water is hot, add all the vegetables, kombu and spices to the pot, except for the miso paste. Allow the mixture to come to a boil, and then reduce the heat to low. Let it simmer for a minimum of 5-6 hours to allow the flavors to infuse.
If you prefer using a slow cooker, you can transfer the ingredients to the cooker and let it cook overnight. The slow cooking process will further enhance the flavors and nutrient extraction.

3. Ready to sip!

Once the broth has simmered for the desired duration, strain the liquid to separate it from the vegetable solids. You can save the vegetable solids to use in other soups or dishes.
Now, it’s time to add the miso paste to the broth. Miso paste not only adds a delicious savory flavor but also acts as a healthy alternative to salt. Add the miso paste according to your taste preferences, adjusting the amount to achieve your desired flavor profile.
After adding the miso paste, give the broth a gentle stir to incorporate it evenly. Remember to store the broth in the refrigerator if you plan to consume it within the next two days. For any remaining broth, consider pouring it into large silicone cube trays. This way, you can easily store and freeze individual portions, ready to be used as a flavorful base for soups, grains, or even sipped on its own.
